  • 1 pound chicken or turkey sausage (casings removed)
  • 3 large shallots (or 1 onion, finely chopped)
  • 5 garlic cloves (minced)
  • 3/4 cup dry apple vinegar
  • 2 cups canned pumpkin (unsweetened)
  • 1 1/2 cups chicken or vegetable stock
  • 1/2 cup mascarpone cheese

Instructions

  1. Preheat oven to 275°F.
  2. In a large skillet, heat half the olive oil over medium heat and sauté the sausage until browned, about 5–7 minutes.

  5. Mix in mascarpone cheese over low heat until melted.
  6. In another skillet, heat remaining olive oil over medium-high heat and crisp the gnocchi until golden brown on each side. Serve immediately with the creamy pumpkin sauce.
