  • 4 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese

Instructions

  1. In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Add chicken pieces seasoned with garlic, Cajun seasoning, paprika, and black pepper. Sear until golden brown (6-8 minutes), then set aside.
  2. In the same skillet, melt remaining butter and add rotini pasta along with chicken broth. Bring to a boil; reduce heat and simmer until al dente (about 12-15 minutes).
  3. Lower heat and stir in cubed Velveeta cheese and heavy cream until melted and smooth.
  4. Return the seared chicken to the skillet, mix gently, and add shredded cheddar cheese until melted.
