  • 12 oz medium shell pasta
  • 1 cup heavy cream
  • 4 oz cream cheese
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Cook the shell pasta in salted boiling water until al dente; drain and reserve some pasta water.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Season thick-cut chicken pieces with Cajun seasoning and cook until golden brown and fully cooked.
  3. In the same skillet, add heavy cream and cream cheese; stir until smooth.
  4. Mix in Parmesan cheese until the sauce is thick and creamy. Add reserved pasta water if necessary.
  5. Combine cooked pasta and half of the mozzarella into the sauce, stirring until melted.
  6. Return the chicken to the skillet or serve atop the pasta, garnishing with remaining mozzarella.
