  • 1 tbsp olive oil
  • 1 finely chopped onion
  • 2 garlic cloves, minced
  • 2 cups diced carrots
  • 1 cup peas (fresh or frozen)
  • 1 tbsp curry powder
  • 1 tsp paprika
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 1 cup basmati rice
  • 3 cups water
  • Pinch of salt
  • 1 tbsp butter
  • Salt & pepper
  • Chopped parsley for garnish

Instructions

  1. Cook the rice: In a pot, bring 3 cups of water to a boil. Add basmati rice and a pinch of salt. Stir once, cover, reduce heat to low, and cook until fluffy.
  2. Prepare the chicken: Season chicken with salt and pepper. Heat olive oil in a large skillet over medium heat, add chicken, and brown on all sides. Set aside.
  3. Sauté vegetables: In the same skillet, melt butter, then add onion and garlic; sauté until fragrant. Add carrots and cook until softened.
  4. Create the sauce: Stir in curry powder and paprika. Add tomato paste, then chicken stock followed by heavy cream; simmer until thickened.
  5. Combine ingredients: Return chicken to skillet along with peas; cook until heated through.
  6. Serve: Dish out over fluffy rice and garnish with chopped parsley.
