  • 1 lb boneless chicken breast or thighs, cut into bite-sized pieces
  • 4 garlic cloves, minced
  • 3 cups baby spinach
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne or fusilli pasta
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken pieces, season with salt and black pepper, and cook until browned (5-7 minutes).
  2. Stir in minced garlic and chopped turkey bacon (if using). Sauté for another 3-4 minutes until the turkey bacon is crispy.
  3. Add baby spinach and stir until wilted. Pour in chicken broth and bring to a simmer.
  4. Mix in heavy cream and pasta; cover and cook according to package instructions until pasta is al dente.
  5. Remove from heat and stir in mozzarella and Parmesan cheese until melted and creamy.
