  • 1 lb boneless, skinless chicken breast, diced
  • Salt and pepper to taste
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz uncooked penne or rotini pasta
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add diced chicken, season with salt and pepper, and cook until golden brown (5-7 minutes).
  2. Add diced onion and sauté until translucent (3-4 minutes). Stir in minced garlic and cook for another minute.
  3. Pour in chicken broth and heavy cream; stir well and bring to a boil.
  4. Add uncooked pasta to the boiling mixture; reduce heat to low, cover, and simmer until pasta is al dente (10-12 minutes), stirring occasionally.
  5. Remove from heat; stir in mozzarella and Parmesan cheese until melted.
  6. Fold in fresh spinach until wilted. Serve hot.
