  • 1 lb boneless, skinless chicken breasts
  • 12 oz rotini pasta
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1 cup Velveeta cheese, cubed
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste

Instructions

  1. Season chicken strips with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  2. In a large skillet over medium-high heat, add olive oil and sear the seasoned chicken until golden brown and cooked through. Remove and keep warm.
  3. Cook rotini in a pot of salted boiling water until al dente; reserve 1 cup pasta water before draining.
  4. In the same skillet, melt butter and sauté minced garlic. Add heavy cream and bring to a gentle simmer.
  5. Stir in Velveeta until melted; mix in mozzarella and Parmesan until thickened.
  6. Combine cooked rotini with the creamy sauce until well-coated. Serve with chicken on the side.
