  • 1 lb boneless skinless chicken breasts
  • 12 oz rotini pasta
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Cajun seasoning
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 4 cloves garlic, minced
  • Fresh chopped parsley

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente (9-11 minutes). Reserve ½ cup of pasta water before draining.
  2. In a skillet, heat olive oil and butter. Sauté chicken strips seasoned with Cajun seasoning until golden and cooked through (8-10 minutes). Remove from skillet.
  3. In the same skillet, melt more butter, sauté garlic, then add heavy cream and milk. Stir in Velveeta until melted.
  4. Add mozzarella and Parmesan to the sauce; simmer until thickened. Toss in cooked rotini and adjust consistency with reserved pasta water if needed.
  5. Prepare Cajun butter drizzle by melting butter with a pinch of Cajun seasoning.
  6. Serve the rotini topped with chicken and drizzle with the Cajun butter.
