  • 2 soft-boiled eggs
  • 2 small chicken or plant-based breakfast sausages
  • Avocado, sliced
  • 1 cup sauerkraut
  • 1 kiwi, peeled and sliced
  • 1 cup sliced strawberries
  • 1 cup blackberries
  • 1 slice toasted sourdough or crusty bread
  • Salt, pepper, chili flakes (to taste)

Instructions

  1. Boil the Eggs: Bring water to a boil in a saucepan. Lower heat to a simmer, add eggs, and cook for 7-8 minutes. Transfer to an ice bath, peel gently, and slice in half.
  2. Cook the Sausages: In a frying pan over medium heat, cook the sausages for about 6-8 minutes until browned.
  3. Assemble the Bowl: In a serving bowl, add cottage cheese on one side. Arrange egg halves, cooked sausages, sauerkraut, avocado slices, kiwi slices, strawberries, and blackberries around it. Place toasted bread on one edge.
  4. Season & Serve: Sprinkle salt, pepper, and chili flakes over the eggs and avocado as desired. Serve immediately.
