Ingredients

  • Salmon fillets
  • Unsweetened shredded coconut
  • Panko breadcrumbs
  • Salt
  • Pepper
  • Egg
  • Fresh pineapple, diced
  • Red onion, finely chopped
  • Cilantro, chopped
  • Lime juice
  • Jalapeño (optional), minced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine shredded coconut, panko breadcrumbs, salt, and pepper.
  3. In another bowl, beat an egg until smooth.
  4. Dip each salmon fillet into the beaten egg, then press into the coconut mixture until well-coated.
  5. Place the coated salmon on a lined baking sheet and bake for 15–20 minutes or until golden brown and cooked through.
  6. For the pineapple salsa, mix diced pineapple, red onion, cilantro, lime juice, and jalapeño in a separate bowl. Set aside.
  7. Serve the baked salmon topped with pineapple salsa.
