  • 2.5 lbs beef chuck, cut into large chunks
  • 2 tablespoons coconut oil
  • 1 large onion, finely sliced
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • 1 tablespoon brown sugar
  • Salt & black pepper to taste

Instructions

  1. Heat coconut oil in a large heavy-bottomed pot over medium heat. Sauté sliced onion until translucent (about 5 minutes). Add minced garlic and grated ginger; cook for another minute.
  2. Add beef chunks and brown on all sides for about 5-7 minutes.
  3. Stir in red curry paste, ground cumin, cinnamon, turmeric, and optional chili flakes to coat the beef evenly.
  4. Pour in coconut milk and beef broth; add brown sugar, salt, and black pepper.
  5. Cover the pot; reduce heat to low and let simmer for 2-3 hours until the beef is tender.
