  • 1 1/2 cups Cake Flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold, unsalted butter, cubed
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix brown sugar, softened butter, and cinnamon in a bowl until smooth for the filling.
  3. In another bowl, combine all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
  4. Cream cold butter and granulated sugar in a stand mixer until smooth; then mix in eggs and vanilla.
  5. Gradually add dry ingredients until just combined.
  6. Shape dough into a rectangle on a floured surface; spread cinnamon filling evenly over it.
  7. Roll up the dough tightly from one edge and slice into 10–12 cookies.
  8. Bake for 9–11 minutes or until edges are lightly golden brown.
  9. Allow cooling before frosting with cream cheese mixture.
