  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup light brown sugar, packed
  • 11/2 teaspoons ground cinnamon
  • 1 large apple, peeled, cored, and chopped into small pieces
  • 2 tablespoons brown sugar for topping
  • 1/4 teaspoon ground cinnamon for topping
  • 3/4 cups confectioners' sugar for glaze
  • 1/4 teaspoon ground cinnamon for glaze
  • 2 tablespoons water for glaze

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8.5 x 4.5-inch loaf pan by greasing and flouring it.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Use an electric mixer to beat softened butter, granulated sugar, and vanilla until smooth. Add eggs one at a time.
  4. Gradually mix in the dry ingredients with half the milk until just combined.
  5. In another bowl, combine chopped apples with brown sugar and cinnamon.
  6. Pour half of the batter into the prepared pan, top with half of the apple mixture, then swirl gently.
  7. Repeat layering with remaining batter and apples; sprinkle topping mixture over the top.
  8. Bake for 45 to 55 minutes or until a toothpick comes out clean.
  9. Cool for 15 minutes before glazing with a mixture of confectioners' sugar, water, and cinnamon.
