  • 4 peaches
  • 1 sweet red bell pepper
  • 1/4 cup red onion
  • 3 green onions
  • 1/3 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Sriracha
  • 1 lime
  • 8 tortillas
  • Fresh cilantro
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 1/4 teaspoon chili powder for salsa

Instructions

  1. In a large skillet, heat olive oil over medium heat. Season chicken with smoked paprika, chili powder, salt, and pepper. Cook for 5–7 minutes on each side until fully cooked.
  2. Meanwhile, in a mixing bowl, combine diced peaches, bell pepper, red onion, green onions, chopped cilantro, lime juice, chili powder, salt, and pepper to make the salsa.
  3. For the crema, mix Greek yogurt, mayonnaise, Dijon mustard, Sriracha, lime juice, and chopped cilantro in a separate bowl until smooth.
  4. Slice cooked chicken and warm tortillas. Assemble tacos by layering chicken strips with peach salsa and cilantro-lime crema.
