  • 2 tablespoons (30g) sugar
  • 1 teaspoon salt
  • 10g fresh yeast, crumbled
  • 3 large eggs (150g), beaten
  • 2/3 cup (165g) unsalted butter, softened and diced
  • 1 cup + 2 teaspoons (25 cl) whole milk
  • 1 teaspoon butter
  • 1 vanilla pod
  • 2 egg yolks
  • 1/4 cup (50g) sugar
  • 3 tablespoons (20g) cornstarch
  • 1 tablespoon all-purpose flour
  • 3/4 cup (120g) mini chocolate chips
  • 1/4 cup (50g) sugar
  • 1/4 cup (50 ml) water
  • 1 large egg + 1 yolk, beaten

Instructions

  1. In a stand mixer, combine flour, sugar, salt, and crumbled yeast.
  2. Add beaten eggs and knead until smooth; gradually incorporate softened butter.
  3. Cover and let the dough rise for 2 hours.
  4. Prepare vanilla custard by heating milk with vanilla; whisk egg yolks with sugar and cornstarch, then combine.
  5. Roll out the dough, spread cooled custard on one half, sprinkle chocolate chips, fold over, and cut into rectangles.
  6. Allow brioches to rise again for 2 hours before brushing with egg wash and baking at 350°F (180°C) for 10-12 minutes.
  7. Brush with warm sugar syrup after baking for a glossy finish.
