  • 1 ½ lbs. yukon gold potatoes (or red potatoes), peeled and cubed
  • 5 cups chicken broth
  • 1 cup half and half
  • 1 small yellow onion (diced)
  • ¾ cup carrots (diced)
  • 2 ribs celery (diced)
  • 3 cloves garlic (minced)
  • 12 teaspoons olive oil
  • 2 tablespoons butter (not needed if Turkey Bacon drippings are used)
  • Salt and pepper to taste
  • 1 teaspoon hot sauce
  • ¼ cup flour
  • 1 ½ cups cheddar cheese (shredded)
  • Green onions (to garnish)
  • 1 teaspoon dried parsley
  • ½ teaspoon EACH: dried rosemary, oregano, mustard powder
  • ¼ teaspoon pepper
  • 1 pinch red pepper flakes

Instructions

  1. Cook turkey bacon in a large pot until crispy; set aside and reserve drippings.
  2. Season chicken with salt and pepper, then sear in the pot until golden brown.
  3. Add diced onion, carrots, and celery; sauté until softened.
  4. Stir in minced garlic and dried herbs.
  5. Sprinkle flour into the mixture; cook briefly to eliminate raw taste.
  6. Gradually add chicken broth followed by half-and-half while stirring continuously.
  7. Incorporate cubed potatoes; bring to a boil then simmer until tender.
  8. Lower heat and stir in shredded cheese until melted.
  9. Garnish with chopped turkey bacon and green onions before serving.
