  • 1 lb boneless, skinless chicken breasts
  • 12 oz rotini pasta
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook rotini in salted boiling water until al dente (8-10 minutes). Reserve 2 tbsp of pasta water before draining.
  2. Season chicken strips with Cajun seasoning, garlic powder, salt, and pepper.
  3. In a skillet over medium-high heat, heat olive oil and 1 tbsp butter. Sear the chicken strips for about 3-4 minutes per side until golden brown and cooked through.
  4. Reduce heat to medium; melt remaining butter in the same skillet. Sauté minced garlic until fragrant.
  5. Stir in heavy cream and milk; bring to a gentle simmer. Add Velveeta cheese until melted and smooth.
  6. Mix in mozzarella and Parmesan cheeses; stir until creamy.
  7. Combine cooked rotini with the sauce until well-coated.
