Ingredients

Scale
  • 4 pounds beef short ribs
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup rice vinegar
  • 1/4 cup sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a mixing bowl, combine soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, and black pepper. Mix until the sugar dissolves.
  3. Place the beef short ribs in a shallow dish and pour the marinade over them. Marinate for at least 30 minutes; overnight for best flavor.
  4. Heat oil in a large oven-safe pot over medium-high heat. Sear each side of the ribs until browned (about 2-3 minutes per side).
  5. Pour the remaining marinade over the seared ribs in the pot. Cover and cook in the preheated oven for about 3 hours until tender. After cooking, mix cornstarch with water and add it to the pot to thicken the sauce before glazing the ribs and broiling for additional caramelization.
