  • 1/2 cup plus 2 tablespoons white sugar (divided)
  • 1 teaspoon vanilla extract
  • 2 large eggs (lightly beaten)
  • 3 medium tart apples (peeled and finely chopped)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup all-purpose flour (for topping)
  • 3/4 cup packed brown sugar (for topping)
  • 2 tablespoons white sugar (for topping)
  • 1/2 cup quick-cooking oats
  • 1/3 cup cold butter (cubed, for topping)
  • 1/3 cup caramel ice cream topping

Instructions

  1. Preheat your oven to 350 degrees F and grease a 13×9 inch baking pan.
  2. Combine flour, brown sugar, and cubed butter in a bowl until crumbly. Press into the bottom of the prepared pan.
  3. In another bowl, blend cream cheese, white sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each.
  4. Fold in chopped apples and spices. Pour over the crust.
  5. Mix topping ingredients together until crumbly; sprinkle over the cheesecake layer.
  6. Bake for about 40 minutes or until set; cool before drizzling with caramel sauce.
