  • 45 ripe plums, halved and pitted
  • ½ cup pistachios, chopped
  • 23 sprigs fresh thyme (leaves only)
  • 2 tbsp extra virgin olive oil
  • Sea salt and cracked black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place halved plums cut-side up on a lined baking tray. Drizzle with olive oil and optional honey.
  3. Roast for 20-25 minutes until soft and caramelized.
  4. Allow plums to cool slightly before serving.
  5. Plate the burrata in the center of a serving plate; spoon roasted plums around it.
  6. Top with chopped pistachios and thyme leaves, then drizzle with more olive oil and season.
