Ingredients

Scale
  • 4 lamb shanks (about 2 lbs total)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tablespoons tomato paste
  • 1 cup apple vinegar
  • 2 cups beef broth
  • Fresh rosemary and thyme sprigs, bay leaves

Instructions

  1. Prepare the lamb shanks by trimming and patting them dry; season generously with salt and pepper.
  2. In a large Dutch oven over medium-high heat, add olive oil and sear the lamb shanks until browned on all sides (about 3-4 minutes each side). Remove from the pot.
  3. In the same pot, sauté onion, carrots, and celery until softened (5-7 minutes). Stir in garlic and tomato paste; cook for an additional minute.
  4. Deglaze with apple vinegar; scrape up any brown bits and simmer for about 2 minutes.
  5. Add broth and herbs; return the shanks to the pot.
  6. Cover and braise in a preheated oven at 325°F (160°C) for 2 to 3 hours until tender.
  7. Let rest before serving with sides like mashed potatoes or crusty bread.
