  • 2 1/2 cups cake flour
  • 2 Tbsp unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp fine salt
  • 1/2 cup unsalted butter, room temperature
  • 1 3/4 cups granulated sugar
  • 2 large eggs, room temperature
  • 1 1/4 cups buttermilk, room temperature
  • 1/2 cup vegetable or canola oil
  • 2 tsp vanilla extract
  • 1 tsp white vinegar
  • 1 tsp red gel food coloring
  • 1 1/2 cups unsalted butter, room temperature (for frosting)
  • 1 cup full-fat cream cheese, room temperature
  • 1 Tbsp vanilla extract (for frosting)
  • 1 tsp fine salt (for frosting)
  • 7 cups powdered sugar
  • 3 Tbsp heavy whipping cream
  • small squirt of red gel food coloring (for frosting)
  • 1/2 cup seedless raspberry or strawberry jam
  • 3 Tbsp water

Instructions

  1. Preheat oven to 350°F (175°C) and grease round baking pans.
  2. In one bowl, mix cake flour, cocoa powder, baking soda, and salt. In another bowl, beat butter and sugar until fluffy; add eggs one at a time. Mix in buttermilk, oil, vanilla extract, vinegar, and red food coloring.
  3. Combine dry ingredients with wet mixture until just combined. Pour into pans and bake for about 27 minutes or until a toothpick comes out clean.
  4. Cool cakes completely before frosting. To make the buttercream, beat softened butter and cream cheese; add powdered sugar and vanilla.
  5. Assemble by layering cakes with raspberry jam in between and frosted on the outside.
