  • 150 g Bourbon biscuits
  • 45 g unsalted butter
  • 300 g soft cream cheese
  • 150 ml double cream (heavy cream)
  • 60 g caster sugar
  • 410 g black cherry fruit filling (tinned)
  • 150 g blackberries
  • 125 g blueberries
  • Zest and juice of 1 lime
  • 60 g dark chocolate (for shavings or drizzle)

Instructions

  1. Prepare the base by crushing the Bourbon biscuits into fine crumbs and mixing them with melted butter. Press firmly into the bottom of a tart pan and refrigerate for 30 minutes.
  2. In a bowl, mix cream cheese and sugar until smooth, then gradually whisk in double cream until thickened. Spoon over the chilled base and smooth out.
  3. Chill in the fridge for at least 4 hours or overnight to set.
  4. Combine black cherry filling with blackberries, blueberries, lime zest, and juice; spread over the set cheesecake.
  5. Garnish with grated dark chocolate before serving.
