  • 2/3 cup light brown sugar
  • 1 tsp salt
  • 3 large eggs, ideally room temp
  • 2/3 cup vegetable oil
  • 1/3 cup buttermilk – mix 1/3 cup whole milk + 1 tsp vinegar
  • 1 cup sour cream, ideally room temp
  • 3/4 cup cocoa powder, Dutch Processed preferred
  • 2 tsp instant coffee
  • 3/4 cup boiling water
  • 300g dark chocolate for frosting
  • 3 tbsp corn syrup
  • 8 oz cream cheese, room temperature
  • 1/3 cup cocoa powder
  • 1 cup powdered sugar
  • 1/4 tsp salt
  • 1 1/4 cup heavy cream, chilled

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, sugars, baking powder, baking soda, and salt.
  3. In another bowl, mix eggs, vegetable oil, buttermilk, and sour cream until smooth.
  4. Combine wet ingredients with dry ingredients; fold in cocoa powder and instant coffee.
  5. Gradually add boiling water to the batter until fully combined.
  6. Pour into the prepared pan and bake for about 30 minutes or until a toothpick comes out clean.
  7. Allow the cake to cool completely before preparing the fudge frosting.
  8. For frosting: Melt dark chocolate with corn syrup; beat cream cheese with cocoa powder and sugar; mix in melted chocolate and fold in chilled heavy cream.
  9. Frost cooled cake evenly and decorate as desired.
