  • 200g beef sirloin or tenderloin, cut into cubes
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup snow peas
  • 1 onion, chopped
  • 2 tbsp soy sauce
  • 2 tsp vegetable oil
  • 1 cup cooked rice (preferably day-old)
  • 1 egg, lightly beaten

Instructions

  1. Season beef with salt and pepper. In a wok or large skillet over high heat, heat 1 tsp of vegetable oil and sear the beef cubes for 2-3 minutes until browned. Remove from the pan.
  2. In the same pan, add garlic and onion, followed by broccoli, carrots, and snow peas. Stir-fry for 3-4 minutes until just tender. Add soy sauce and combine well.
  3. In a separate pan over medium heat, add remaining oil and stir-fry diced carrots and corn for about 2 minutes. Push aside to scramble the egg until cooked through; then mix with vegetables. Add cooked rice and soy sauce; stir-fry for another 3 minutes until heated.
  4. Serve fried rice on one side of the plate with stir-fried vegetables beside it topped with seared beef.
