  • 2 salmon fillets (150-180g each)
  • 1 tsp Cajun seasoning
  • 3 tbsp olive oil
  • 2 cups baby potatoes, halved
  • 2 cloves garlic, minced
  • 1 bunch asparagus, trimmed
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss halved baby potatoes with olive oil, minced garlic, salt, and pepper; spread on a baking tray in a single layer.
  3. Roast the potatoes for 25-30 minutes until golden brown.
  4. On another tray, drizzle asparagus with olive oil and season; bake for 12-15 minutes. Top with cheese during the last 5 minutes until melted.
  5. Season salmon fillets with Cajun seasoning and olive oil; bake for about 12-15 minutes until cooked through.
  6. Serve by layering potatoes, asparagus, and salmon on each plate.
