  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground allspice
  • 1/8 tsp. ground cloves
  • 2/3 cup vegetable oil
  • 2 large eggs
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream
  • 1 tsp. pure vanilla extract
  • 23 large honeycrisp apples
  • 1/4 cup salted butter
  • 1/2 cup dark brown sugar
  • 2 Tbsp. heavy cream
  • 1/2 tsp. pure vanilla extract
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×9-inch nonstick pan with parchment paper.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, baking soda, salt, and spices.
  3. In another bowl, mix the wet ingredients until smooth: vegetable oil, eggs, sugars, sour cream, and vanilla.
  4. Combine wet and dry mixtures gently until just blended. Fold in grated apples carefully.
  5. Pour batter into the prepared pan and spread evenly.
  6. Bake for 35-40 minutes or until a toothpick comes out clean from the center.
  7. While cooling slightly in the pan, prepare the brown sugar icing by melting butter with brown sugar and heavy cream over medium heat; whisk until combined then add vanilla and powdered sugar.
  8. Drizzle warm icing over the cake and allow it to soak in before slicing.
